I like it without any streusel topping, but you could add one. Also, you could make it with apples. Or peaches and sub out the nutmeg for ginger. Gah... that would be good.
2 cups flour
3/4 tsp baking powder
3/4 tsp baking soda
1/2 tsp salt
2/3 cup sugar
1/2 tsp nutmeg
1/2 tsp cinnamon
And now put together the wet stuff:
1/2 cup oil
1 egg (or egg replacer or 1/4 cup applesauce to make it vegan)
1/2 cup yogurt (regular or soy)
1/3 cup liquid sweetener (I used brown rice syrup, but maple syrup or barley malt or corn syrup would work out just fine)
1 or 2 pears chopped up
Mix those two bowls together and bake in an 8" by 8" pan for 30-40 minutes at 350 degrees (or until the middle is done). I go even longer, but everyone's ovens are different.
It doesn't look that special, but DANG it's good. I'm going to make some coffee.
